There’s a place here in Denver called Chedd’s. They are what I would call the “Grilled Cheese Sandwich Kings of Denver”. That’s all they do – Grilled Cheese Sandwiches.
(Side note: I don’t care for the name ‘Toasted Cheese Sandwich” – that’s what my friend Plyman calls them and he’s an asshole.)
Chedd’s is awesome. They let you pick the bread, the cheese, the toppings (say, maybe some pesto or jalapenos) and even the meat. There has to be millions of combinations of Grilled Cheese Sandwiches you can order in this place.
They do have a menu with a few suggestions and when I walked in there today, their daily special really caught my attention. It was a Turkey, Bacon, Gouda and Pesto. and holy shit, what a magical combination it was. I love Turkey, who doesn’t like bacon, pesto is a great addition to any sandwich and Gouda is a really underrated cheese.
Most of their sandwiches have quirky names, but I don’t think that this sandwich from heaven had one. ATTENTION CHEDD’S: I will throw out my offer to you: you have my blessing to name that sandwich after me and call it the “Neal Stewart”.
The other thing I like about Chedd’s is that they have lemonade and iced tea, so you can do a little DIY Arnold Palmer, which I always enjoy.
My one problem with Chedd’s is that I always forget about them and they occasionally pull the sandwiches off the griddle a little too soon. But other than that, they’re solid.
